    Chocolate hazelnut balls

    Ten minutes in the food processor, a week in the fridge

    10 minutes Serves Makes about 20

    Roasted hazelnuts, oats, dates and cacao rolled into bite-size balls, with a spoonful of FOCUS powder in the mix. Simple, chocolatey, gone fast.

    Ingredients

    • 1 cup hazelnuts, lightly roasted
    • 1/4 cup sunflower seeds
    • 1/2 cup whole jumbo oats
    • 1/4 tsp sea salt
    • 3 tbsp coconut oil, melted
    • 14 medjool dates, stones removed
    • 1 tsp vanilla bean paste
    • 1/3 cup cacao powder, plus extra for dusting
    • 1 to 2 tsp FOCUS Lion's Mane powder

    Method

      Lightly roast the hazelnuts. Meanwhile soak the dates in just-boiled water for 10 minutes, then drain most of it off.

      Process all the dry ingredients to a fine powder.

      Add the wet ingredients and dates and process until smooth.

      Roll into balls and coat in cacao.

    Cook's notes

    • Keep in an airtight container in the fridge for up to a week.
