    Cottage cheese seeded loaf

    Oats, seeds, walnuts and no yeast

    10 minutes, plus 50 to 60 minutes baking Serves Makes 1 loaf

    A dense, flour-free loaf made from oats and cottage cheese, packed with seeds and walnuts and a heaped teaspoon of FOCUS powder. Slice it, toast it, freeze the rest.

    Ingredients

    • 200g rolled oats
    • 1/2 tbsp baking powder
    • 1 heaped tsp FOCUS Lion's Mane powder
    • 2 eggs
    • 300g cottage cheese
    • Good pinch of salt
    • 1/4 cup mixed seeds (flax, sunflower and sesame)
    • 1/4 cup finely chopped walnuts
    • Extra seeds for the top, optional

    Method

      Heat the oven to 180C.

      Mix the dry ingredients together in a bowl.

      In a separate bowl, whisk the eggs and cottage cheese well, then add to the dry ingredients.

      Press into a loaf tin lined with baking paper, sprinkle with extra seeds and bake for 50 to 60 minutes until golden.

      Cool fully before slicing.

    Cook's notes

    • Keeps in an airtight bag in the fridge, and freezes well. Toast from frozen.
