    Chocolate, peanut butter and elderberry date bars

    Foraged jam, flattened dates and a Lion's Mane chocolate top

    50 minutes, plus freezing Serves Makes 12 bars

    A freezer bar in layers: rolled-flat dates, peanut butter, a quick elderberry chia jam and dark chocolate with FOCUS powder stirred through, finished with nettle seeds and sea salt.

    Ingredients

    • 160g fresh elderberries, destemmed
    • 1/3 cup water
    • 3 tbsp maple syrup, plus 1 to 2 tsp optional
    • 1.5 tsp chia seeds
    • About 1 cup soft medjool dates
    • 150g dark chocolate
    • 20g FOCUS Lion's Mane powder
    • 4 tbsp peanut butter
    • 2 tbsp dried nettle seeds
    • Pinch of flaky sea salt

    Method

      Run a fork through the elderberries so the berries pop off into a bowl.

      Simmer the berries in the water for 20 minutes, stirring now and then, then mash lightly.

      Stir in the maple syrup and chia and leave 15 minutes to turn jammy.

      De-stone the dates, lay them out in a 20 by 25cm rectangle between two sheets of baking paper and roll flat.

      Melt the chocolate gently over a bain-marie, take off the heat and stir in the FOCUS powder.

      Spread the peanut butter then the jam over the dates, drizzle over the chocolate and sprinkle with nettle seeds and salt.

      Freeze until set, then cut into 12.

    Cook's notes

    • Store in the freezer for up to 6 months. Take out 10 minutes before eating.
    • Only pick elderberries that are fully ripe and black, and always cook them.
