    Satay edamame chopped salad

    Ten minutes, one bowl, a peanut dressing worth doubling

    10 minutes Serves 1 to 2

    Crunchy red cabbage, pepper and edamame tossed in a sharp satay dressing, with a teaspoon of FOCUS powder whisked straight into it. Built for a desk lunch that doesn't feel like one.

    Ingredients

    • 1/2 red pepper, sliced
    • 1/4 red cabbage, finely sliced
    • 1 cup cooked edamame beans
    • Big handful chopped coriander
    • 2 spring onions, finely sliced
    • 1/4 cup toasted cashews (or peanuts)
    • Dressing: 3 heaped tbsp peanut butter, juice of 1 lime, 1 tbsp sriracha, 1 tbsp sesame oil, 1 tbsp honey or maple syrup, 1 tbsp soy sauce, 1 tbsp rice wine vinegar
    • 1 heaped tsp FOCUS Lion's Mane powder
    • A drop of water, if needed

    Method

      Add all the salad ingredients to a big bowl.

      Whisk the dressing ingredients and FOCUS powder together, loosening with a little water if needed.

      Pour over the salad and toss.
